Recipe: Cacao Coconut Rough Vegan Protein Bars

This quick and oh so tasty raw vegan cacao and coconut rough protein bar recipe is really nutritious and a perfect solution for even the strongest chocolate cravings.
The almond meal offers good fats and mood elevating amino acids and minerals. The cacao adds antioxidants and the coconut oil, for all the wonderful benefits. Plus the addition of Vegan protein powder means these bars are loaded with 100% plant based protein derived from pea and brown rice.
SERVES: Approx 15 to 20 bars
PREP TIME: 10 - 15 mins plus around an hour to set
1 cup almond meal
1 cup coconut shredded
3/4 tbl spoon cacao
1/3 cup coconut oil (heated slightly to form a liquid)
1/3 cup rice malt syrup or maple syrup
2 scoops Paleolicious Vegan protein powder
Add as little or as much rice malt or maple syrup as you like. The more you add the sweeter they will be. If you add less the bars will maintain the raw flavour of the cacao.
Melt the coconut oil so that it is in liquid form.
Simply add all of the ingredients to your food processor and blitz until evenly combined and moist. If you find you mix a little dry just add some extra coconut oil. Don't worry the coconut oil will set to firm when you chill the mix.
Once combined press the mix into a baking tray that is lined with baking paper. You might need press it into the corners and smooth it over with the back of a spoon. We like to keep our around an inch thick.
Finally pop the tray in the fridge to set. If you just can't wait a short spell in the freezer will speed up the process.
